Cheesy Chicken Pot Pie

The best Cheesy Chicken Pot Pie!

I grew up on pot pie. One of the first real dinners I cooked as a young girl was a box chicken pot pie. I was a master and then they stopped making it so I moved to the frozen kind and I just couldn't deal with the sauce in those pies. It wasn't the same so I didn't have one again until I was talking to a friend that said she found a delicious one on Pinterest so I checked it out and needed to add my own special taste to it. I can easily make it during my kids nap and then have it ready for dinner time. It is always a crowd pleaser.

Ingredients
  • 1 unbaked pie crust store bought or homemade.
  • 1 puff pastry sheet
  • 2 Tbsp. of butter
  • 1-2 cup(s) of veggies (carrots, green beans, broccoli, and such. I use frozen veggies)
  • 1/2 cups of flour (I use einkorn flour but all purpose works too)
  • 2 cups of chicken broth
  • 1 cup milk
  • 2 cups of cooked shredded chicken
  • 1 1/2 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • 1 egg for an egg wash

1. Cook the pie crust as the directions on the box state.
2. Melt butter in a large sauce pan and add the veggies. Cook them for 3 minutes.
3. Add the flour to the veggies and butter mixture and stir
4. Add milk and chicken broth and stir until it thickens.
5. Add the chicken, cheese, salt, and pepper and turn off the heat.
6. Let mixture cool before you add it to the bottom pie.
7. Once mixture is cool pour in the pie crust and add the top puff pastry sheet
8. Add egg wash to the puff pastry sheet and cook according to the box directions.
9. Let the pie cool for 10 min before you serve it up and enjoy.

                            Surprise Baby Announcement

Oh baby, Carly has some exciting news! I'm expecting a baby in December. I wanted to share the news to my mother and mother in-law in an exciting way, so Kim and I put our heads together. After looking all over the internet we came up with a brilliant plan, a onesie with a cute message on it. I put them in a box and had them open it on Mother's Day. They were both brought to tears and couldn't be happier.

Material

  • One or two white 0-3 month onesie
  • Two colors of embroidery floss
  • One needle
  • A 1/4 of a yard of fusible interfacing  
  • Iron
  • One pencil or washable marking pen

 

Steps

  1. Measure out the area you plan on embroidering
  2. Cut out the fusible interfacing  to fit in that space.
  3. Then flip your onesie inside out and iron the fusible interfacing by following the directions. that come with the fusible
  4. Then in your best handwriting use the pencil or marking pen to write your cute message on the front of the onesie.
  5. If you are happy with the front and print, you may beginning the time consuming process of embroidering :)
  6. The knot was something I could never get down, so Kim had to help me. Take the tail of the floss and wrap it tightly around the needle 3 times. Hold the knot between you thumb and pointer finger and pull straight down.
  7. Start on the inside of the onesie and make your stitches small.

Even though a onesie is small, this project easily takes 1 hour. However you can do this while watching Doctor Who :)

                   Delicious Cacao Coconut Crispy 



One day my husband and I were shopping at Vitamin Cottage when we discovered a $6.00 bag of  coconut pieces covered in cacao powder, a big splurge, but something I had been eyeing for weeks. When we got home we opened the bag and almost finished them in one sitting. They were so good but we needed to find a more affordable way to enjoy these little drops of heaven!

My husband decided we should try to make our own. As we began to experiment, some batches had too much cacao, so we tried salt on a few batches to balance out the cacao and that seemed to work. Next, we had to figure out the cooking time. Some batches got over cooked, but six batches later he found the recipe! I knew he needed to guest blog this, because it is my new favorite snack! I use it as a topping for yogurt and frozen yogurt, and well I 'sometimes' just eat it plain. ('sometimes' = everyday after work.) I hope you enjoy it as much as we do! 

Ingredients 

  • 3-4 cups Organic Coconut flakes
  • 2 Tb. Organic Cane Sugar unrefined
  • 3-4 Tb. Cacao Powder
  • 1/4 tbsp. Celtic Sea Salt
  • Dash or two of  Organic Cinnamon  
  • 2 big scoops of Virgin Coconut Oil



 Directions

1. Preheat oven to 350 degrees.
2. Put foil on a cookie sheet with two scoops of coconut oil.
3. In a large bowl, mix the sugar, cacao, salt, and cinnamon.
4. When the oven is heated put the cookie sheet with the oil in the oven for 1-2 min letting the oil melt.
5. When oil is melted, place the coconut flakes on the melted oil and mix by hand or spoon to coat the flakes with the oil.
6. Sprinkle a few spoonfuls of your cacao mix onto the coconut flakes.
7. Mix, then sprinkle more on the coconut until the coconut is covered evenly.
8. Spread coconut out evenly on the cookie sheet.
9. Bake for 5-6 minutes.
10. Let cool and enjoy.

A Healthier Super Bowl Snack

 Trail Mix



Tomorrow is the big day... the Super Bowl!

If you are looking for a healthy, super easy, not the mention cost effective snack to munch on during the game, try this...


Ingredients
  • Dried bananas
  • Chocolate covered espresso beans
  • Toasted coconut (see instructions below)
  • Almonds
  • Pumpkin seeds
  • Dried apple rings
  • Dried pineapple rings (broken into smaller pieces)
  • Chocolate covered goji berries

You can find these ingredients in the bulk section of your local grocery store. Feel free to add or remove ingredients as you feel fit. Personally, I would add more chocolate and I am sure Carly would agree!


To make the toasted coconut preheat over to 325 degrees. Spread out coconut in a thin layer on a baking sheet. Bake for 5-10 minutes stirring occasionally. Be sure to keep a close eye on things as it will toast quickly.  Allow to cool for a few minutes before adding to the trail mix.

Combine ingredients in a large bowl. With clean hands mix until combined.  Store in an airtight container. Enjoy!

Valentine Fortune Cookies DIY 


Kim and I saw something like this on Pinterest but they were very complicated so we decided we needed to find an easier and better way. Kim with her smarts came up with a very clever and easy plan. We made nine of them in less than 20 minutes and had a lot of fun coming up with the fortunes! The hardest part of it was coming up with the fun fortunes but lucky for you we created a list for the different people in your life. Enjoy!

Items Needed:

* most of these items can be found at your local craft store
  • An assortment of foam circles- you can buy pre-cut circles or cut your own from a sheet of foam
  • Small glue dots
  • Candy (kisses or hugs work great) or money to put inside
  • Paper cut into strips

Simple Directions  

  1. Fold the circle in half.   (It will look like a taco shell) 
  2. Then you push the closed side of the circle in the middle. (It will instantly take the shape of a fortune cookie.)
  3. Place a small glue dot where the two sides meet. Make sure it's not to far back or you will make the cookie stay open.
  4. Stuff some yummy candy in the cookie. Go with chocolate...yummmm!
  5.  Write or type out some fortunes. (see the list below)
  6. Fold the paper in half and shove it in the cookie.  
  7. Hand to your favorite person.

Mad Libs Valentine Cards

Mad Libs Valentine Cards

Kim and I were talking about making our students Valentines cards this year and Kim remembered an easy creative idea she had seen in last years Family Fun magazine. We took a look at it and decided that we could improve on it a little. Kim suggested adding a pencil because her students ALWAYS need one. So we went to the local craft store and bought enough stuff for 60 students and it was all under $20,  a perfect price for two teachers!

Materials

  • Special dollar bin pencils
  • Mad Libs
  • Heart punch outs
  • Cute String
  • Red, pink, and white doilies

Steps

  • Cut apart the Mad Libs.
  • Fold the Mad Lib so you only have 1 inch not doubled up. 
  • Place the pencil at the bottom and roll tightly.
  • Place the doily on the outside of the Mad Libs and roll up.
  • Put a very small piece of tape to hold it all together.






  • Next write a message on the heart. Examples: MAD about you! You have MAD skills!
  •  Punch a hole in the corner of your heart and tie a string around the pencil.  


 And, Voila! You have easy and practical Valentines to hand out to your students!
