Ingredients
- Dried bananas
 - Chocolate covered espresso beans
 - Toasted coconut (see instructions below)
 - Almonds
 - Pumpkin seeds
 - Dried apple rings
 - Dried pineapple rings (broken into smaller pieces)
 - Chocolate covered goji berries
 
To make the toasted coconut preheat over to 325 degrees. Spread out coconut in a thin layer on a baking sheet. Bake for 5-10 minutes stirring occasionally. Be sure to keep a close eye on things as it will toast quickly. Allow to cool for a few minutes before adding to the trail mix.
Combine ingredients in a large bowl. With clean hands mix until combined. Store in an airtight container. Enjoy!
